このスパークリング純米大吟醸は、awa酒協会の認定基準により、通常の日本酒に比べると倍以上の時間と手間をかけた新しい日本酒です。
一次発酵は長期の低温発酵を木桶で行い、二次発酵は瓶詰め後さらに長期の発酵、その後瓶を逆さまにして瓶口にオリ下げ、瓶口のオリを凍らせて抜き、低温殺菌の後、さらに数ヶ月の熟成期間を経て完成しました。
濁りの無い透明感、キメ細かい泡とエレガントな酸味、甘さを抑え日本酒らしさにこだわりました。日本酒を超えた新しいお酒をお楽しみください。グラスに注ぎ冷やしてお召し上がり頂くのがお薦めです。
BRUT NATURE(ブリュット ナチュール)とはシャンパン用語で糖類添加を全くしない辛口を意味しています。
